1 cup Milk, 1% 2 large Egg, fresh, whole, raw 1 tsp Vanilla Extract 4 tbsp Canola Oil 1 tbsp Lemon juice 2.50 tsp Baking Soda 2.50 cup Wheat flour, white, all-purpose, unenriched 2 cup Bob's Red Mill Organic Oat Bran 1 tsp Himalayan Pink Salt 0.75 cup Apple Sauce (Motts) Unsweetened 175 Grams (3/4 c) PC Organics Greek Yogurt - Plain 32 gram(s) Camino Brown Sugar 160 gram(s) Dried Cranberries - Organically Yours (40g=1/4c) 4 tbsp Orange Zest (4 tbsp= zest from one orange) 1 tsp Cinnamon, ground 1 fruit (2-5/8" dia) Oranges
BATTER - Combine liquids: milk, yogurt,, beaten eggs, vanilla, oil, applesauce, lemon juice, juice one orange with 1/4 c water (or use 1/2 cup of ready made orange juice), and orange zest. Add sugar and oat bran. Let sit. Preheat oven to 350F. Sift together flour, baking soda, cinnamon, and salt then add to liquid ingredients. Blend in cranberries. Spoon into extra large paper baking cups. Makes 1 1/2 dozen
