Black Bean Chicken

Ingredients
4 chicken breasts1 can black beans (drained)4 tablespoons of pace picante sauce (medium)2 tsp. garlic powder1/4 tsp cumin1/4 tsp paprika
Directions
Place 4 chicken breasts into a lightly greased casserole dish. Drain canned black beans and mix well with remaining ingredients. Pour mixture over chicken. Cover with Aluminum foil and bake at 350 for 45 minutes or until chicken is fully cooked and juices run clear.

    Instead of the picante sauce, I used a can of diced tomatoes. I cooked it on the stove top. It was a one pan meal (easy clean up is always a plus) and I didn't have to heat up the house by using the oven).The chicken was so tender and moist-it was absolutely delicious! - 7/9/08
