Stuffed Pepper Rings

Ingredients
16 oz Beef, 90% Lean Ground Beef from Sirloin .25 cup Flaxseed .50 cup Parmesan Cheese, grated .25 tsp Pepper, black 1 tsp Salt 1 cup, chopped Green Peppers (bell peppers) .50 cup, chopped Onions, raw 1 serving Egg white, large 3 tbsp Heinz No Sugar Added Ketchup 2 tsp Tobasco Pepper Sauce(1 tsp 5mL) (by MARVINJE) 1 cup Kathys Marinara No sugar added 1 tbsp Garlic powder 1 cup Publix Low Moisture Part Skim Mozzarella Shredded Cheese
Directions
1) Take two peppers and cut the tops and bottoms off each. Chop the tops and bottoms into small pieces. Set aside. 2) Place the ground beef into a mixing bowl. Add the garlic powder, pepper, salt, flaxseed, grated Parmesan cheese and chopped Green Peppers. Mix well. 3) In a small bowl combine the large egg, 3 Tbsps No sugar ketchup and hot sauce to taste. 4) Add the egg mixture to the Ground Beef mixture and combine well. 5) Take the rest of the peppers and clean out the seeds. Slice each pepper into 4 ring slices. 6) Spray the bottom of a 13" pan and place each ring down. Fill each one with a 6th of the mixture. 7) Cook at 350 degrees for 45 minutes. 8) Remove from oven and split one cup of marinara and one cup of the shredded mozzarella among the 8 pepper rings. 9) Return to oven and cook an additional 15 minutes.
