Faux (Cauliflower) Mac 'n Cheese - Keto style

Ingredients
2 oz Cream Cheese 1/8 tsp Garlic powder 2 cup Cheese, sharp cheddar, grated 4 cup cooked Cauliflower Florets, from fresh, no fat added 1 cup Heavy Whipping Cream (Aldi's)
Directions
Clean head of cauliflower cutting into bite size pieces (I use florets only). Steam in double boiler for five minutes (tender crisp no longer because you will be baking). Drain the water and place the cauliflower back in the hot pot (burner is off of course and just let it sit until ready to add) This will help remove any excess water so it is not runny. Bring the HWC to a SIMMER (not boil) and whisk in the cream cheese (and mustard if using) until smooth. Stir in 1 1/2 cups of the cheddar cheese and garlic. Whisk just until the cheese is melted (1 - 2 minutes) then salt and pepper to taste. Place the cauliflower in a greased (buttered in my case) casserole or baking dish after tossing gently with the cheese sauce. Top with the remaining 1/2 cup of cheese. Bake about 15 minutes at 375 degrees F until lightly browned and bubbly. Let stand about 5 minutes before serving.
