Chicken Salad

Ingredients
4 Chicken thighs. CuminChili PowderLemon Pepper SeasoningKosher SaltGround black peppergarlic powder1/4 sweet red pepper1/4 small onion1 stalk celeryHellmann's Olive Oil Mayo
Directions
Makes 4 servings.
Mix approx. 1/2 tsp. each cumin, chili power, kosher salt, ground black pepper, lemon pepper seasoning, and garlic power. Rub on Chicken Thighs while skin is still on. Bake approx. 45 min - 1 hour, til no longer pink on inside.
Meanwhile, finely dice red sweet pepper, onion and celery.
When chicken cools enough to touch, remove skin and bone and roughly chop or pulse in food processor. Add vegetables and approx. 2 tbs. Mayo. Mix well. Season to taste with additional salt, pepper, and cumin (if desired).
For low carb, serve over lettuce leaves.
