Low Fat Lime Tarts

Ingredients
4 boxes Athens mini fillo (phyllo) shells (15 shells per box)1 small pkg jello sugar free lime jello1 cup boiling water1 8oz pkg low fat cream cheese1 8 oz carton fat free cool whip1/2 tbs lime zest
Directions
Let cream cheese come to room tempurature to soften it. Thaw cool whip.

In a large mixing bowl, dissolve jello in one cup boiling water. Add softened cream cheese and lime zest and mix until blended. At this point, if it's still warm, you can put in fridge to cool down a bit.
Fold cool whip into mixture and blend well.

Using a plastic storage bag, fill the bag and cut off one corner. Fill the shells to desired and chill.
You do not have to thaw the shells before filling them.

Serving size: 2 tarts

Note: You can garnish this with a thin strip of lime zest if you choose or more fat free cool whip on top!
