1 box (5.6 oz) Rice A Roni Cilantro Lime Rice2 tablespoons butter1 can (15 oz) black beans (rinsed)1 can (4 oz) green chile peppers, diced2 cans (11 oz) white shoepeg corn 3/4 cup shredded cheddar cheese 6 tbsp sour cream, reduced fat
In large skillet or saucepan, combine 2 cups water with butter, rice and seasoning mix, beans, chile peppers, and corn. Bring to a boil.
Cover, reduce heat to medium-low. Simmer 25 minutes or until most of liquid is absorbed, stirring occasionally.
Remove from heat, leave covered. Let stand for 5 minutes. Stir well before serving.
Top with sour cream (1 tbsp) and shredded cheddar cheese (2 tbsp).
