1/2 head medium Cauliflower, raw chopped fine1/2 cup Couscous 1.5 cup Chickpeas3 ounces cooked Chicken Breast cut into bite sized pieces1/2 cup, pitted, chopped Dates 1/2 cup, ground Almonds 1;2 tsp Cinnamon1/2 tsp Cumin 1/2 tsp ground corriander 1/2 tsp cinnamon 1 tbsp Extra Virgin Olive Oil 1 clove Garlic, minced1 can Diced Tomatoes 1.5 cup Peas, frozen
Cook couscous according to package directions. Brown the garlic in the olive oil. Add cauliflower and cooked couscous and cook for 5 minutes. Stir in remaining ingredients and cook another 5 minutes. Season to taste with salt and pepper.
