Coconut Poke Cake

Ingredients
Directions
1 box Pillsbury White Cake Mix (reduced sugar version), prepared as directed1/2 tsp almond extract1 can Light Coconut Milk1 container Cool Whip Lite2-3 cups flaked sweetened coconut
Prepare cake mix as directed (adding almond extract) and bake in a lightly greased 13 x 9 pan.
Once out of the oven, LIBERALLY poke holes in cake with a service fork (or straw).
Shake can of coconut milk well, and slowly pour over cake, allowing holes to fill with liquid.
In a large bowl, combine cool whip and coconut and ice cake.
Allow to cool and serve. Makes 24 servings.
Note: I like to reserve a few tablespoons of coconut milk to add to icing mix...
