BLE Italian Coleslaw - sugar free

Ingredients
5 cups, shredded Cabbage, fresh - either red or white (or use a packaged coleslaw mix with shredded carrot included)1/4 tsp Salt (opt) plus some for sprinkling1/2 tsp Caraway Seed 1/2 tsp Garlic powder (or more if you like)1 tsp Onion powder 1/4 tsp Pepper, black 4 tbsp (1/4 cup) Rice Vinegar (unseasoned) or any white vinegar2 tbsp Olive Oil 1-1/2 tsp Lemon Juice (bottled is fine)1/2 tsp Dijon Mustard
Directions
Place shredded cabbage in a bowl and sprinkle with salt (I don't measure the salt),mix well and let sit for a half hour or so to soften. Then sprinkle with the caraway seed.

In a screw top jar place the garlic powder, onion powder, 1/4 tsp salt (if using) black pepper, vinegar olive oil, lemon juice, and mustard, and shake well. Pour over the cabbage and caraway in the bowl and mix well.
