Split Pea Soup with Ham Shank

Ingredients
1 lb. dried Split Peas1 Medium Onion, diced2 Medium Carrots, diced1 lb Smoked Ham Shank4 Cloves of Garlic, diced24 Cups of watersalt to taste
Directions
Fill a large pot with 24 cups of water. Add 1 medium onion (diced), 2 medium carrots (diced), 4 garlic cloves (diced), and 1 lb. ham shank and bring to a boil. Allow to boil for 30 min. Remove ham shank and dice into cubes (remove bone). Add ham back to soup and add split peas. Allow to boil for 2 hours or until thickened. Soup will be thick but still somewhat runny. Makes 10 1/2 cup servings.
