Chicken & Mushroom Marsala

Ingredients
2 (6oz) boneless, skinless chicken breasts1 tsp olive oil2 cup mushroomsCooking Spray.333 c chicken broth.25 c marsala wine.25 tsp salt.25 tsp pepper
Directions
pound each chicken breast to 1/4 inch thick.

Heat oil in non-stick skillet over medium-high heat. Add chicken and cook 3 minutes on each side until cooked through. Remove from pan and keep warm.

Add mushrooms to pan and coat mushrooms with cooking spray. Cook for 4 minutes until brown, stirring occassionally.

Combine broth, wine, salt and pepper in a small bowl. When mushrooms are cooked add broth mixture and simmer for 4 more minutes, scraping pan to loosen browned bits. Spoon over chicken.

Serving size is 1 breast and 1/2 cup mushroom mixture.
