Ingredients
250 grams Eggplant, fresh 1 medium whole (2-3/5" dia) Red Ripe Tomatoes 1 small Onions, raw 2 clove Garlic 1 tsp Ginger Root 1 tbsp Sunflower Oil 0.5 tsp Turmeric, ground 1 tsp Chili powder 0.5 tbsp Cumin and Corriander seeds powder (by FANORONHA_14) 0.5 tsp Salt 100 gram Moringa, fresh, raw (by KELMOM23) 15 gram(s) Fresh Market unsweetened dessicated coconut (15g/3tbsp) (by TESSLER65)
Directions
1. Heat oil
2. Sautee onion, garlic, ginger
3. When the raw smell is no longer present, add tomatoes and the spices and cook for 2 - 3 minutes
4. Add eggplant and drumstick pieces pieces
5. Add a bit of water
6. Cook until done
