Ingredients
1.0 stick Butter, unsalted2.0 fl oz Lemon Juice2.0 tbsp Maple Syrup1.0 tbsp Lemon Peel6.0 large Egg Yolk2.0 tbsp Chia Seeds CHIA POWER Navitas
Directions
Melt butter in sauce pan. Combine lemon juice, chopped peel and maple syrup. Add more juice to taste or add lemon extract. Bring to slow boil. Remove from heat. Add one yolk at a time and whisk vigorously to temper egg and prevent clumps of scrambled eggs in curd. One all added whisk until thickened. Place in two small mason jars and add tbsp of chia seeds to each. Close and shake. Place in refrigerator until ready to eat.
