Ingredients
1 tsp canola oil1/2 cup packaged potatoes O'Brien3 slices cooked bacon, crumbled2 medium eggs1/8 cup cheddar or colby cheese, shredded
Directions
Heat canola oil in pan. Add pototoes, cook as directed. When potatoes are almost done, add crumbled bacon. Beat eggs, add to potato and bacon mixture. Cook, stirring occassionally until eggs are scrambled. Remove to plate, add cheese to top. Serves 1 but can be multiplied easily for a group
