2 cans Goya Black Beans - drained & rinsed2 cups College InnĀ® Light & Fat Free Chicken Broth 50% Less Sodium (Or veggie broth to make vegetarian)Onions, raw, .66 cup, chopped1 cup green pepper, dicedPepper, black, .25 tspSalt, .25 tsp*Cumin , .5 tbspBay Leaf, 1 tsp, crumbledChili powder, .5 tspGarlic, 2 clove1 2-serving bag instant Success brown rice
place all ingrediants in crockpot except for rice, mix well.
cook on low 8-10 hours.
In last 15-30 minutes, remove bay leaves, turn heat to high and add instant brown rice. The longer the rice sits, the more the liquid is soaked up.
Serving suggestion - use as filling for burritos (let excess liquid drain out first if the rice hasn't absorbed it all). I made with low carb wraps, salsa and low fat mexican blend cheese.
