Radish greens and potato soup

2 tbsp Coconut Oil1 medium (2-1/2" dia) Onions, raw 3 medium Potato, raw, diced 4 cup Radish greens, fresh 1 cup (8 fl oz) Chicken Broth or Bouillon 3 cups of water 1 cup Almond breeze unsweetened original Herbs, salt and pepper to taste
1. Melt coconut oil in a large saucepan over medium heat. Stir in the onion, and saute until tender. Mix in the potatoes and radish greens, coating them well. Pour in the broth and water (to cover the potatoes and the greens). Bring the mixture to a boil. Reduce heat, and simmer 30 minutes.
2. Allow the soup mixture to cool slightly, and transfer to a blender. Blend until smooth.
3. Return the mixture to the saucepan. Mix in the almond milk. Cook and stir until well blended. Serve with radish slices.
