1/2lb tortilla chips1 cup canned enchilada sauce2 eggs1 Tbsp canola oil1 cup grated cheese
1. In a large frying pan, heat vegetable oil. Scramble eggs in pan. Remove and set aside.
2. Pour enchilada sauce into frying pan, keep burner on medium heat, and stir in tortilla chips. Make sure chips are coated in sauce.
3. Add cooked eggs back into pan and sprinkle grated cheese on top to melt. Can garnish with 1 1/2 Tbsp chopped green onions (not in nutrition calculation)
Serves 4-6 (calculated at 6)
