12 large Egg, fresh, whole, raw 8 tbsp Cheese-Chevrai Goat Cheese crumbles 4 oz Cabot Seriously Sharp Cheddar Cheese 3 cup Spinach, fresh 3 serving Baby Bella Mushrooms (3 oz) 1 tbsp Butter, unsalted 1 tbsp Organic Valley Heavy Whipping Cream 2 tbsp chopped Shallots Salt Pepper
Preheat oven to 375. In a cast iron skillet melt butter, saute mushrooms and shallots 3-5 mins. Add spinach and wilt, salt and pepper to taste. Top with the sharp cheddar cheese. In separate bowl add eggs and heavy cream, whisk, crumble in the goat cheese and stir. Pour goat cheese and egg mixture on top of the vegetable and Cheddar mixture. Bake in the oven for 30 mins.
