Quick Potato Salad

Ingredients
1 lb red potatoes, quartered2 hard boiled eggs, chopped1 cup chopped sweet onion1/2 cup light mayo2 tsp yellow mustard1 tsp cidar vinegar1/4 tsp white pepper
Directions
Cook the red potatoes in boiling water about 10-12 minutes, until they can be pierced by a fork.

Drain the potatoes and cool.
Add the egg and onion.

In a separate bowl, combine the mayo, mustard, vinegar, and pepper. Add this mixture to the potatoes, onions, and egg. Combine gently (you don't want to mash up your potatoes!). Cover and refrigerate. It can be served immediately. It's delicious warm or cold!
