0.5 tsp Vanilla Extract6.0 tbsp Coconut Oil2.0 serving Stevia Extract In The Raw Sugar Substitute [1 packet]0.5 serving Baker's unsweetened baking chocolate bar32.0 tbsp Coconut Flakes, Organic, Unsweetened
In food processor, combine first 5 ingredients (reserve 1T coconut oil for coating). Refrigerator until set. Don't allow to refrigerate too long, or the dough will become rock hard!
Roll into ~1" balls (a little smaller). Place on parchment paper-lined baking sheet. Refrigerate.
In saucepan, melt chocolate. Add coconut oil and sweetener. Dip coconut balls completely into chocolate mixture and return to baking sheet. Freeze until you want to eat.
