Indian yogurt Potato Salad

Ingredients
2.5 cup OIKOS Greek Yogurt Plain Nonfat 1.5 tbsp Safflower Oil, linoleic 2 tbsp Cumin seed 800 grams Red Potato about 5 medium red potatoes, unpeeled2 1tsp Canola Oil 2 tbsp Extra Virgin Olive Oil
Directions
1. boil potatoes, cool, and chop into 3/4 inch dice
2. mix yogurt with salt and pepper to taste
3. mix and heat oils until a cumin seed sizzles; add the rest of the cumin seed and sizzle 5 to 6 seconds.
4. add potatoes, more salt and pepper to taste
5. Cook and stir until somewhat browned, about 5 to 6 minutes, and most of the oil is absorbed.
6. Remove potatoes from heat, cool about 5 minutes, then add to yougurt mixture.
7. Garnish with cilantro if desired.

Serving Size: generous 1/2 cup
