Slow Cooker Ham in Gravy

2 raw green bell peppers2 raw onions0.5 cup canola oil1 cup all-purpose flour1 tsp paprika1 tsp black pepper 0.5 tsp thyme 2 tsp mustard powder 4 cup 1% milk2 cup prepared mashed potatoes4 cup diced ham 2 cup shredded cheddar
Using food processor, blend peppers and onions into paste.
Heat vegetable paste in skillet with canola oil over medium heat.
Stir in flour and seasonings.
Gradually stir in milk; cook, stirring constantly until thickened.
Pour mixture into slow cooker.
Add remaining ingredients, stirring until well blended.
Cover.
Cook on low 8 hours, or on high for 4.
