Lemongrass Chicken Salad

SALAD:1 1/2 cups chopped Kale 1 cup shredded Green Cabbage1 cup shredded Radicchio1/2 cup shredded Brussels Sprouts1 medium Fuji Apple, cored and sliced 1 cup Snow Peas, sliced on diagonal1 medium Red Bell Pepper, thinly sliced 2 roasted Chicken Breasts, skinless and deboned 1 1/2 tbsp chopped Shallots or Green Onions1/4 cup Cilantro3 tbsp sliced roasted Almonds2 tbsp fresh chopped Mint LeavesDRESSING:1 1/2 tbsp Lemongrass4 tbsp Lime Juice1 1/2 tbsp Fish Sauce 2 tsp Brown Sugar (or sweetener of choice) 1 clove crushed Garlic1 tsp Chili Garlic Sauce or to taste
SALAD:
In a large bowl, combine kale, cabbage, radicchio, Brussels sprouts, apple, snow peas, and bell pepper. Top with shredded chicken, shallots or green onion, cilantro, almonds, and mint. Top with lemongrass dressing below and serve.
DRESSING:
Trim lemongrass to reserve only the white less fibrous portion, then slightly crush and slice into small pieces. In a blender combine lemongrass, lime juice, fish sauce, brown sugar, garlic, and chili garlic sauce. Pour over salad and enjoy!
