Low Carb Bacon Gueyere Egg Bites

Ingredients
9 eggs4 oz. cream cheese1/2 cup heavy cream1/2 tsp. kosher salt1/4 tsp. black pepper2 1/2 oz. gruyere cheese, grated6 slices cooked bacon, coarsely chopped
Directions
Place the oven rack in the center of the oven. Preheat to 300 degrees.

Spray or grease 9 wide-mouth canning jars, 4- or 8-oz. Place in a shallow baking dish. Set aside

Place the eggs, cream cheese, cream, salt, and pepper in the container of a blender. Process until smooth.

Divide the chopped bacon and grated cheese evenly among the canning jars. Pour the egg mixture over. Wipe rims of jars, if needed.

Pour hot water into the shallow baking dish, filling just to below the level of the egg mixture.

Bake for 45 minutes. Remove from oven and allow to stand in hot water for five additional minutes. Serve warm or at room temperature.

If saving for future meals, add lid when completely cooled and refrigerate or freeze.
