Enchiladas Suizas (salsa verde)

Ingredients
1 cup chopped onion1/2 cup chopped fresh cilantro2 garlic cloves, minced1 bottle mild salsa verde (Trader Joe's or other)2 cups shredded cooked chicken breast1/3 low fat cream cheese, softened1 cup chicken broth8 corn tortillasCooking spray1/2 cup Mexican cheese blend (can use low fat version to reduce calories)
Directions
Combine salsa verde, garlic, onions and cilantro in a blender and process until smooth. Combine chicken and cream cheese and stir in 1/2 cup salsa mixture.

Bring broth to a simmer in medium skillet. Add one tortilla at a time and cook for 2 seconds on each side or until soft (if left too long, they'll tear). Drain on paper towels. Spoon about 1/4 cup chicken mixture down center of tortilla and roll it up. Place tortilla, seam side down in a baking dish coated in cooking spray. Repeat with all 8 tortillas.

Pour remaining salsa over enchiladas; sprinkle with cheese. Bake at 425 for 12-15 minutes. Serve immediately.

    Excellent. I used pork tenderloin instead of chicken and used a little less cilantro. I liked that I didn't have to make the verde the old fashioned way and Trader Joe's salsa verde was perfect. Next time I'll get 2 of them so I'll have some to serve on the side. - 2/3/13
