Vegetarian Black Bean Soup

Ingredients
3 Cloves Garlic1/2 Onion (Chopped)2 CarrotsJalapeno2 Cans Black Beans1 Can diced tomatoes1.5 cups vegetable broth2 tsp cumin1 tablespoon chili powder
Directions
Saute vegetables and garlic in olive oil until tender.

Add all other ingredients and bring to boil.

Reduce heat cover and simmer for 15 minutes.

ladle 3.5 cups into a blender and blend until smooth

return them to pot and simmer for 20 minutes uncovered.

serve

    This recipe is easy to make, and it turned out delicious! I added an orange bell pepper to the recipe, and next time, I think I'm going to try it with corn too. It's a perfect way to warm up and fill up on a chilly day! - 11/18/08
