KK's chicken stew

Ingredients
1-1 1/2 lbs chicken, skin and bones removed2 tbsp Extra Virgin Olive Oil1 medium Onion chopped3 cloves Garlic, grated4 cups Chicken Broth2-4 tbsp tomato paste2 tsp Italian seasoning1/2 tsp Salt
Directions
Heat oil in pot, salt n pepper chicken and lightly brown. Set aside. In same pot, add onions and cook about 5 minutes, decrease heat to medium low and add garlic. Stir and cook 30 seconds. (You can add dry white wine, 1/4 c, if you'd like. Heat to boiling and reduce about 90%) add broth, tomato paste, seasoning and salt. Stir till boiling, add chicken, cover and simmer for 45 minutes. Stir occasionally. Serve over polenta.
