Herb and Mesclun Salad with Grilled Shrimp

1/4 cup lime juice1/2 tsp ground cumin1/4 tsp salt1/4 tsp crushed red-pepper flakes1 lb large shrimp, shelled and deveined6 cups mesclun or other mixed baby greens1 cup fresh mint leave1 cup cilantro leaves1 cup flat-leaf parsley leaves1 small red onion, thinly sliced2 tbsp vegetable oil
In medium bowl, whisk 2 tablespoons of lime juice, 1/2 teaspoon of cumin, 1/8 teaspoon of salt and a pinch of pepper flakes. Stir in shrimp and marinate at room temperature, stirring occasionally, for 20 minutes. Meanwhile, mix washed and dried greens with onion in a serving bowl and refrigerate. In small boil, mix oil and remaining lime juice, cumin, salt and pepper flakes. Lightly oil grill pan and preheat over medium heat. Grill shrimp 2 minutes on each side, until bright pink and just opaque throughout (Shrimp may also be broiled. Cook same amount of time). Toss shrimp with greens and dressing.
