Lentil Sweet Potato Stew

2 cup Lentils 6 cup (8 fl oz) Water, tap 1 sweetpotato, 5" long Sweet potato 1 cup, strips Celery, raw 3 medium (2-1/4" to 3-1/4" dia.) Potato, raw 3 medium Carrots, raw 2 tbsp Extra Virgin Olive Oil 1.5 tsp Oregano, ground .66 tbsp Basil 2 tsp Salt 1.25 cup Pasta Sauce (Hunt's Thick & Rich Roasted Garlic & Herb Tomato Sauce) 1 cup Peas, frozen
Bring to a boil and then simmer lentils in water until soft, at least an hour, adding celery and 1 tsp. salt 1/2 hour into it. Boil sweet potato in small pot until soft, then puree. Saute chopped potatoes and carrots in EVOO with 1 tsp. salt, oregano and basil until al dente. Add to lentils with pasta sauce and pureed sweet potato. Add peas and heat to serve.
