Abuela's Arroz con Pollo

3 c White Rice3 tbsp extra virgin olive oilsalt and pepper5 chicken breasts2 cloves of garlicdried cilantrodried parsley2 carrots1 medium red bell pepper2 stalks of celery1 medium onionsoy sauce
cook 3 c white rice as instructed on package.
Cook the chicken breasts fillet style with garlic, cilantro, salt and pepper, and parsley putting a little on each chicken until done.
Cut the chicken into cubes.
Chop long carrots into long slices and then into smaller strips across ( same for the bell pepper, and celery), mince the onion.
In a heavy pan pour oil get it hot and put all the veggies in to simmer until soft.
Add the chicken to the veggies.
Add the cooked rice to veggies and chicken one cup at a time. After each cup of rice add enough soy sauce to color and stir but not a lot!
Continue until complete.
