Egg Pie

Ingredients
6 egg whites3 whole eggs2 cups fresh baby spinach1/2 cup grated cheddar cheese1/2 grated mozzarella cheese(any cheese may be used)1 pie crust
Directions
Beat eggs and egg whites in a bowl. Add spinach. Stir so that the spinach is coated with the eggs. Place in a pie crust. Cover with 1 cup of grated cheese. Place in 350 over for about 20 minutes or until eggs are fluffy and cheese is melted and golden brown.

    I used fillo dough instead of pie crust (less calories) and served with fresh sliced tomatoes. Every good would make it again. Would be great for a brunch. - 7/9/08

    I've thought about using fillo dough myself. I'm sure to try it now!
