Ingredients
1 serving Egg Omelet/Scrambled (2 large whole eggs) 1 oz Cheese - Happy Farms Colby & Monterey Jack Cheese (1 oz per serving) salt and pepper to taste1 medium Mushrooms, fresh .5 tbsp chopped Onions, raw 1 pat (1" sq, 1/3" high) Butter, salted
Directions
Break eggs and whisk. Pour in greased or ceramic nonstick pan. Saute chopped onion and mushroom in butter. (You can microwave for a minute.) Cook, flip, add mushroom, onion and cheese to half and fold over. Remove from pan.
