150g Basmati Rice (uncooked)1 tbsp Olive Oil 1 tsp Cinnamon, ground 1 clove Garlic 0.5 tsp Cumin, ground0.5 tsp Coriander, ground0.25 tsp Turmeric, ground 0.5 tsp Salt 1 small box (1.5 oz) Raisins 1 cup Vegetable Stock40g peas, frozen
1. Heat the oil and add the cinnamon stick, followed by the onions garlic and spices and cook until the onions are soft.
2. Add the raisins and rice and stir well.
3. Add the stock, bring to the boil and then turn heat down to minimum, and simmer with the lid on for 10-12 minutes
4. Remove from the heat and stir in the peas and fresh coriander.
