Shrimp, Pineapple, and Pepper Skewers

Ingredients
1 pound peeled and deveined shrimp1 16oz can pineapple chunks, drained (reserve 1/4 c. juice)3 green bell peppers3 T. fat free italian dressing10 bamboo skewers
Directions
Put shrimp, pineapple chunks, and peppers on bamboo skewers that have been soaked in warm water. Whisk together pineapple juice and italian dressing. Brush all sides of skewers with dressing. Sprinkle with salt and pepper if desired. Grill over medium heat for 5 minutes turning occasionally.

    I made this recipe, with only a couple changes. I added onions to the skewers and the basting sauce was pineapple juice, italian dressing and teriyaki sauce. I served it with plain rice. - 7/19/10
