1/4 cup Coconut Flour - Bob's Red Mill 2 tbsp Coconut Oil - melted1/8 tsp Baking Soda 1/8 tsp sea salt1 egg- large, fresh 1/2 cup Egg White (Naturegg Simply Egg Whites) (or four egg whites)
Preheat the oven to 350°F (175°C).
In a medium sized bowl, sift together the dry ingredients.
In another bowl, whisk together the wet ingredients until well combined. Slowly add the wet ingredients into the dry ingredients and stir until very smooth and free of any lumps.
Scrape batter into a mini-loaf pan. Bake for 30-35 minutes, or until a toothpick comes out clean.
Double the recipe and bake in a regular sized loaf pan for 45-50 minutes.
