Curried Chicken & Rice

Ingredients
1 chicken breast half, boneless, skinless1/4 cup white rice1/4 cup broccoli1/4 cup cauliflower3 Tbsp Hidden Valley Fat Free Ranch Dressing1 1/2 Tbsp curry powder
Directions
Cook rice according to package directions. While rice cooks, cut chicken into bite-sized pieces and cook broccoli and cauliflower per package directions (or boil 5-6 minutes if using fresh). Meanwhile, cook chicken in a large skillet over medium to medium-high heat, making sure it is cooked all the way through.

Once all ingredients are cooked, drain vegetables and fluff rice with a fork. Combine vegetables and chicken with rice. Add ranch dressing and curry powder and stir until incorporated.

Plate and enjoy!

Serves one quite well.
