3.0 medium Egg, fresh, whole, raw0.25 tsp Nutmeg, ground8.0 tbsp Canola Oil0.42 cup Rice flour, white0.94 serving Don Pablos Queso Blanco1.5 cup Dairy, Milk - Whole - 1 cup
Scald the milk with the ground nutmeg. When starting to boil add the flour and stir with a pinch of salt. It will form a paste like patè choux. Let it rest until it comes to room temp. Meanwhile crumble the country white cheese. After paste is at room temp, add each egg to paste and mix thoroughly. After eggs are combined add the cheese and let dough rest for 15 min before frying. Excellent in the morning with coffee.
