Ingredients
2 unit (yield from 1 lb ready-to Roasting Chicken 4 cup (8 fl oz) Chicken Broth 1 cup RO TEL No Salt Added Diced Tomatoes & Green Chilies 4 oz Cream Cheese Mrs Dash Southwest SeasoningSalt and Pepper
Directions
Chop your roasted chicken into bite size pieces. Be sure to remove all extra fat and skin. Pour chicken broth and rotel into soup pan and heat to a low boil with the chicken to infuse the flavors. Turn down to a simmer. After the soup temperature has come down considerably add your room temperature cream cheese and stir until blended. You can add celery, onions, any veggies you have on hand. I added onion and yellow squash this time. Be sure to add them to your carb count if you do.
