Roasted Garlic and Tomato Soup

9.0 serving Tomatoes, Roma small (2-2.5" diameter; whole)12.0 clove Garlic1.0 cup Leeks3.0 tbsp Extra Virgin Olive Oil3.0 cup Campbell's low sodium chicken broth1.6 cup tomatoes
Cut tomatoes in quarters. Drizzle with olive oil and salt and pepper to taste. Roast tomatoes and garlic at 425 for approximately 45 minutes. Slice leeks thinly. Sautee in instant pot for 2-3 minutes. Add broth, tomatoes, garlic and spices (ex: coconut curry, basil, chili powder), cook on SOUP setting for 20 minutes. NPR for 5 minutes. Using an immersion blender puree. Serve with sour cream or creme fresh!
