Balsamic Carrots

Ingredients
1 bag baby carrots (2lb bag or 4 cups)3 tbsp Olive Oil2 tbsp brown sugar2-3 tbsp balsamic vinegar
Directions
Heat olive oil in large skillet over medium high heat. Add carrots and sautee for 15 minutes or until as tender as you like them. Add brown sugar and balsamic, stir and serve.

    This was a great veggie dish. My husband had seconds and he never eats his vegetables. I did make it slightly different. I used cooking spray instead of olive oil and I used splenda brown suagr instead of regular. We will have this again. - 1/30/09
