Beetroot and Orange Salad

Ingredients

8 oz cooked, peeled beetroot (buy vacuum packed or boil your own in skins, cook and peel)1 large sweet orange1/2 teaspoon caraway seeds (optional)
Server 4 as a side dish
Cut the beetroot into chunks and put in bowl
Remove zest from orange & add to beetroot chunks.
Peel orange and remove pith.
Dice orange, catching juice and add to bowl,
Add caraway seeds if using.
Mix well and cover. Chill.
Leave at least 1 hour for flavours to develop before serving.
