Chicken Stuffed Peppers

Ingredients
6 - 8 Green/Yellow/Red or Orange Peppers1c Sauce1pkg Mixed Vegetables (Shaws Rancho Fiesta Blend)1 lb Ground Chicken, cooked1c Brown Rice, cooked
Directions
Preheat Oven to 375 degrees

Gut and boil peppers to soften...

Brown chicken and add vegetables, rice and sauce. Let simmer while peppers finish cooking (about 10 minutes).

Run peppers under cool water to be able to stuff with chicken mixture.

Bake in oven for 30 - 45 minutes. Cheese can be added last 10 minutes of baking.

Serves 6 - 8

Goes great with corn bread and a side salad :)
