Corn Chowder (Dairy Free)

2 tbsp Olive Oil 2 medium onions5 strips Thick Sliced Bacon 4 cup Cento Chicken Stock 4 cup Cento Organic Vegetable Stock 2 bags frozen sweet White Corn ~ 22 oz Yukon potatoes, diced to bite size2 tsp thyme
Saute the onion in olive oil until brown and fragrant
Add the bacon, cook fully. Chop finely and set aside.
Add stock - veg or chicken is fine. Add corn - can be fresh grilled and scraped off the ear or frozen corn works great too (sweet white corn is best). Sprinkle in the thyme.
Use an immersion blender to blend the corn and stock. Add potatoes and bacon, simmer until potatoes are cooked through.
Serving Size: Makes about 12 1.5-cup servings
