Baked Chicken Taquitos

Ingredients
8 corn tortillas3 slices 2% swiss cheese2 chicken breasts (for easier preparation, I use the breast portion of a rotisserie chicken, without skin)Salsa
Directions
Tear cooked chicken into bite-sized pieces
Heat corn tortillas in microwave until soft
Spray tortilla with Pam
Place 1/2 piece of swiss cheese on tortilla
Fill with chicken, and roll up
Place all rolled tortillas in a baking dish
Spray all over with cooking spray and lightly salt
Bake at 425 degrees for 15-20 minutues or until crispy.
Dip into fresh salsa

I will usually serve with black beans or mexican rice.

    I used shredded chicken and shredded montery jack and colby cheese since I am not a swiss cheese fan. You have to work quickly while the tortillas are warm or they start to tear and break. Love this recipe! - 3/11/11
