Blue Cheese Slaw

Ingredients
½ cut light mayonnaise½ cup reduced fat sour cream3 tablespoons balsamic or white wine vinegar¼ cup canola oil½ teaspoon salt¼ cayenne pepper1 medium head of cabbage coarsely shredded¼-½ cup shredded carrot¼-½ cup finely chopped onion (I use Vidalia when I can get it)¼ cup finely chopped fresh parsley3/4 cup reduced fat crumbled blue cheeseFreshly ground black pepper to taste
Directions
Mix together mayonnaise, sour cream, vinegar, oil, salt and cayenne pepper. In another bowl mix together chopped cabbage, carrot, onion and parsley. Pour dressing over cabbage and mix touroughly. Stir in blue cheese and black pepper to taste.

Cover and chill until ready to serve. The onion taste will become more pronounced the longer it sits so be aware !!
