12 oz Flounder (fish) .25 tsp Salt .25 tsp Pepper, black 4 tbsp Parmesan Cheese, grated 4 tbsp Butter, salted 2 tbsp Extra Virgin Olive Oil
Preheat oven to 425 degrees Fahrenheit. If using frozen flounder, thaw them according to the instructions. Pat each 3-oz. flounder fillet with paper towels to dry them. Salt and pepper each side of the fillets, and sprinkle parmesan on each side as well. melt the butter and add the olive oil to it. Pour half of the butter/oil mixture in the bottom of a shallow baking dish and place the fillets on it. Pour the remaining half of the butter oil mixture over the top of the fillets. Cook in the oven for 15 minutes or until the fish flakes easily with a fork.
