Ingredients
2 cup Coconut milk (light) 4 cup, chopped Carrots, raw 16 oz Atlantic Pollock (fish) 1.5 cup, chopped Onions, raw 3 cup Bell peppers (Green, Red, Yellow, Orange) 0.25 cup Safflower Oil, oleic 3 tbsp Curry powder 4 tsp Garlic 0.25 fruit (2" dia) Limes 6 tbsp Basil 3 tsp ground tumeric (by INSPIREDBYCHJ)
Directions
roast spices in a pan

mix sauce in baking dish

add veggies

bake veggies without fish for 20 min

add fish and bake for another 15 to 22 min. Until fish is white and flakey
