Low Carb Breakfast Cinnamon Toast

4 T melted butter, divided4 T flax seed meal3/4 tsp. cinnamon, divided2 T plus 1 tsp granulated erythritol, divided1/2 tsp. baking powderpinch salt1/2 tsp. vanilla extract1 large egg
In a 4-inch microwave-safe container, mix 2 T butter, flax seed meal, 1/4 tsp. cinnamon, vanilla extract, 1 tsp. erythritol, baking powder, salt, and egg. Cook in microwave for 80 seconds and allow to cool for one minute before removing from container.
Slice in half horizontally to form two slices. Place on a baking sheet lined with foil. Drizzle with remaining butter. Mix remaining erythritol and cinnamon. Sprinkle evenly over slices.
Broil until the tops begin to bubble. Watch carefully. Remove from the oven and cool slightly before serving.
