Rustic Garlic Chicken and gravy

Ingredients
3 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted 2 serving Bacon - Applegate Farms Natural Sunday Bacon 4 tbsp Extra Virgin Olive Oil 3 tbsp Butter, unsalted 35 clove Garlic 2.5 tsp Thyme, fresh 2 cup Chicken stock, home-prepared 12 fl oz White Wine 0.25 cup Flour - Gold medal all purpose flour
Directions
Slice chicken breast in 2-3 pieces and sprinkle generously with salt and pepper and cut bacon slices into small pieces.Preheat oven to 400 Fahrenheit . Put olive oil and butter in Dutch oven, brown chicken. Remove chicken, add bacon and cook till crisp; remove bacon and add garlic. Sauté garlic cloves until golden. Sprinkle flour over garlic and stir. Replace chicken and bacon into pan. Put lid on Dutch oven and put in oven and cook for 15 minutes. Remove from oven back to burner, remove chicken to clean plate, and whisk in wine and bring to simmer. Add in chicken stock and thyme and whisk to combine, bring to simmer. Replace chicken to reward and serve over mashed potatoes (or mashed cauliflower) or rice or pasta.
